Kale with Raisins
-1 Large bunch (1 1/2- 2 lbs.) Kale
-1 T. Olive oil
-3 Large clove garlic, peeled, and finely chopped
-1/4 cup water
-1/4 cup raisins
Rinse kale thoroughly and cut off stems. Cut or strip leaves away from any thick ribs. Save ribs fpr stock or add to soup. Coarsely chop the leaves. Set aside. In a large skillet or wok, heat olive oil. Over medium high heat saute the garlic for 30 seconds.
Add Kale, water, raisins, cinnamon and sea salt to taste.cover and continue to cook over medium high heat, uncovering and stirring everyminute or so, until kale is tender and still bright green.
